Bake these easy-peasy cookies loaded with the flavour of coconuts and apricot jam.COCONUT AND JAM COOKIESIngredients¼ cup desiccated coconut + for rollingApricot jam as required¼ cup butter½ cup sugar1 cup sifted refined flour½ tsp baking powderA pinch of salt½ tsp vanilla essence4-5 tbsps milkMethod1. Preheat the oven at 180ºC.2. Take butter in a bowl. Add sugar and cream well.3. Add refined flour, desiccated coconut, baking powder, salt and mix well.4. Add vanilla essence, milk and mix.5. Divide the mixture into equal portions and roll into balls. Roll the balls in desiccated coconut and arrange on a greased baking tray.6. Make a thumb impression in the centre and flatten slightly.7. Bake in preheated oven for 7-8 minutes.8. Fill the apricot jam in the cavity and bake for 6-8 minutes more.9.
