Cold Vegetable Herb Pasta Salad by Rockin Robin - With Bloopers!

My niece Leslie, show us her favorite cold pasta recipe. We are using home grown tomatoes, fresh basil and parsley, olives and a light vinegar and oil dressing.

Pasta Salad Recipe

Ingredients:
1/4 heaping cup of olive oil
1/3 heaping cup of white wine vinegar
14 oz. medium shell pasta (roughly 3/4 of a 1 lb box)
1/4 cup fresh parsley, chopped or 2 Tb. dried parsley
8 leaves of fresh basil, chiffonade (chopped) or 1 tsp. dried basil
1/2 tsp. dried dill
1/4 tsp. dried oregano
1 tsp. garlic salt
1/2 cup feta cheese crumbled
1/2 cup parmesan, grated
4 or 5 homegrown tomatoes, cut into chunks
3 oz. of sliced black olives
salt and pepper if desired

Directions:

Cook pasta according to package directions, then drain and rinse with cold water until pasta is cold. Drain well and then pour into a large mixing bowl.


Place all of the ingredients in the bowl with the pasta. Stir well until combined. Refrigerate at least 20 minutes. This salad is served cold.

To chill in the refrigerator, Leslie says to cover the pasta with damp paper towels to keep the pasta from drying out. If it does dry out, add a splash more of vinegar and oil and stir.

This pasta dish can be made gluten free by subbing in gluten free noodles. It's also vegetarian.

This pasta makes a great side dish for any type of meat. Leslie mentioned it's wonderful with a grilled steak or chicken.
