We are using home grown tomatoes, fresh basil and parsley, olives and a light vinegar and oil dressing. Pasta Salad RecipeIngredients:1/4 heaping cup of olive oil1/3 heaping cup of white wine vinegar14 oz. medium shell pasta (roughly 3/4 of a 1 lb box)1/4 cup fresh parsley, chopped or 2 Tb. dried parsley8 leaves of fresh basil, chiffonade (chopped) or 1 tsp. dried basil1/2 tsp. dried dill1/4 tsp. dried oregano1 tsp. garlic salt1/2 cup feta cheese crumbled1/2 cup parmesan, grated4 or 5 homegrown tomatoes, cut into chunks3 oz. of sliced black olivessalt and pepper if desiredDirections:Cook pasta according to package directions, then drain and rinse with cold water until pasta is cold. Drain well and then pour into a large mixing bowl.Place all of the ingredients in the bowl with the pasta. Stir well until combined. Refrigerate at least 20 minutes. This salad is served cold. To chill in the refrigerator, Leslie says to cover the pasta with damp paper towels to keep the pasta from drying out. If it does dry out, add a splash more of vinegar and oil and stir.This pasta dish can be made gluten free by subbing in gluten free noodles. It's also vegetarian.
