Corn and Jalapeno Fondue

Piping hot cheese fondue spiced with garlic and onions, taste great with corn and jalapenos. Quick and easy to make.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes 4 servings

Ingredients

1/2 cup boiled and lightly crushed sweet corn kernels (makai ke dane)
2 tsp finely chopped jalapeno
1 1/2 tbsp cornflour dissolved in 1/4 cup of water
1 tbsp olive oil
1 tsp finely chopped garlic (lehsun)
1 tbsp finely chopped onions
1/4 cup finely chopped coloured capsicum
(red , yellow and green)
2 tbsp deseeded and finely chopped tomatoes
1/2 cup milk
1 cup grated processed cheese
salt to taste
1 tsp fresh cream (optional)

For Serving

Method
1. Heat the oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
2. Add the onions, capsicum, mix well and sauté on a medium flame for 1 to 2 minutes.
3. Add the tomatoes and sauté for 1 more minute.
4. Add the corn, milk, cheese and ¾ cup of water, mix well and cook on a medium flame for 1 to 2 minutes or till the cheese melts, while stirring occasionally.
5. Add the prepared cornflour-water mixture and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
6. Add the salt, cream, jalapeno, mix well and cook on a medium flame for 1 minute.
7. Serve immediately with bread pieces.
