CREAMY RICE

Ingredients

¼ cup fresh cream
1½ cups Basmati rice, soaked for 30 minutes
1½ tablespoons butter
1 tablespoon chopped garlic
Salt to taste
Crushed black peppercorns to taste
1 teaspoon dried mixed herbs
3 cups vegetable stock
2 tablespoons parmesan cheese powder
Grilled vegetables (zucchini and red capsicum) for serving

Method

1. Heat butter in a deep non-stick pan. Add garlic and sauté till light golden brown.
2. Drain rice and add to pan and sauté on high heat for 1 minute. Add salt and crushed peppercorns and mix well.
3. Add dried mixed herbs and mix. Add vegetable stock, cover and cook on low heat till rice is done.
4. Add cream and parmesan cheese powder and mix well.
5. Serve hot with grilled vegetables.
