Creamy Spinach Chicken | Sanjeev Kapoor Khazana

Pan seared chicken breast served with a generous serving of cream spinach.

CREAMY SPINACH CHICKEN

Ingredients

400 grams boneless chicken breasts with skin
¼ cup fresh cream
1 small bunch spinach, roughly chopped
Salt to taste
Crushed black peppercorns to taste
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
6-7 button mushrooms, sliced
Salad for serving

Method

1. Take chicken breasts on a plate. Add salt, crushed peppercorns and Worcestershire sauce and rub well from both sides. Set aside to marinate for 10-15 minutes.
2. Heat olive oil in a non-stick pan. Place the marinated chicken breasts with skin side down and cook till golden brown.
3. Flip the chicken breasts and let it cook on one side of the pan. Add garlic in the same pan and sauté for 30 seconds. Add onion and sauté till onion turns translucent.
4. Add mushrooms and sauté for 1 minute. Add spinach and crushed peppercorns, cover and cook for 5-10 minutes.
5. Add cream, mix and cook for 1 minute. Add salt and 1-2 tablespoons water, mix, cover and cook for 2-3 minutes.
6. Serve hot with salad.
