This dish is a signature item of Malvani cuisine..a cuisine native to South Konkan region of Maharashtra and GOA.The name Malwani has come from Malvan town located in the Sindhudurg district on the west coast of Maharashtra.

But...why the name of Bombay Duck?
According the author 'Farook Dhondy' who has written an entire book on Bombay Duck tells that when Britishers introduced Railway system in western India...they used to send this fish in wagonloads from Bombay to interiors of India.

Now the fish used to be stink because of its dried nature but Britishers didnt like to call the fish ' a stinky fish' , so they decided to call the fish by the name of the train in which it was being loaded.Since this fish was carried in Bombay Mail...they started calling it Bombay Duck literally meaning Bombay Mail.
