Garlic powder1 tsp. Ancho chile powder1 tsp. Italian seasoning2 Tbsp. maple syrup1 organic lemon, zested, juiced2 cups chicken brothSalt and pepper2 Tbsp. arrowroot2 Tbsp. cold waterHandful of fresh parsley, chopped2 Tbsp. clarified butterDirections:Lay chicken thighs out and season with 1 tsp. Garlic powder, tsp. Ancho chile powder, tsp. Italian seasoning, salt and pepper. Make sure to season both sides of the thighs.Preheat a cast iron pan over medium high heat. When the pan is hot, add 1 Tbsp. clarified butter. Once it melts add the chicken thighs to the pan.Let the chicken sear for 2 maybe 3 minutes max and then turn the pieces over and do the same on the second side.When the searing is done, remove the chicken to a plate and cover with foil to keep warm. Now you will notice bits of chicken in the bottom of the pan. This is where the magic is. Turn the heat to low and add another tablespoon of clarified butter to the pan. When it melts, add the onion and saute for 5 to 6 minutes. Be sure to scrape the bottom of the pan with a wooden spoon to loosen all the stuck bits. Then add the chicken broth, lemon zest and juice, tsp garlic powder, tsp. Ancho chile powder, tsp. Italian seasoning, 2 Tbsp. maple syrup and a pinch of salt. Stir to combine an then give it a taste to see if you need more of the spices.Place the chicken thighs into a crockpot including any juices that accumulate on the plate. Then pour the sauce over the top. Lay several slices of lemon on top of the chicken.Cook this on high for 3 hours.Take the chicken out of the slow cooker and place them on a plate. Mix the arrowroot with the water until dissolved.Pour this slurry slowly into the sauce in the crockpot while whisking. You can add as much of this as you want.
