INGREDIENTS

3 tablespoons vegetable oil
1/2 cup (60g) quinoa flour, divided
1/2 cup (60g) millet flour, divided
2 teaspoons kosher salt
1 teaspoon sweet paprika
1/2 teaspoon dried oregano
1 large bunch broccoli (about 1 1/2 pounds), stems peeled and sliced into 1/2-inch-thick rounds, florets cut into nugget-sized pieces
1 tablespoon maple syrup
1 tablespoon mayonnaise
3 to 5 dashes hot sauce (optional!)
Lemons, for squeezing!!!
Hot dog buns or lettuce wraps, for serving (optional)
