CRUNCY PANEER BURGERIngredients400 grams cottage cheese (paneer), cut into 2 ½ inch thick slices4 burger buns Oil for deep-frying¾ cup refined flourCrushed black peppercorns to taste ½ teaspoon red chilli powderSalt to taste1 cup coarsely crushed cornflakes¼ cup mayonnaise2 tablespoons green chutney Few romaine lettuce leaves2 medium tomatoes, cut into roundels 4 cheese slicesTomato ketchup for servingMethod1. Heat sufficient oil in a kadai.2. Put flour in a bowl. Add crushed peppercorns, chilli powder, salt and some water and mix well to make a thick batter. 3. Spread cornflakes on a plate. Add salt and crushed peppercorns and mix well. 4. Dip each cottage cheese slice in the batter and coat with cornflakes. 5. Put the prepared cottage cheese slices in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. 6. Mix together mayonnaise and green chutney in a bowl. 7. Halve the buns horizontally. 8. To prepare one burger, spread some chutney-mayonnaise on the top of the bun. Place torn romaine leaf, fried cottage cheese slice, tomato roundels, one cheese slice and torn romaine lettuce leaf on the base of the bun and cove with the top of the bun with chutney-mayonnaise side downwards. 9.
