Chocolate cupcakes with Butter-cream frosting. This unique dessert is worth giving a try.

CUPCAKE SANDWICHES

Ingredients

¼ cup dark chocolate chips
¼ cup cocoa powder
1 cup refined flour (maida)
1 cup butter, room temperature
1 cup castor sugar
3 eggs
½ tablespoon instant coffee powder
1 tablespoon vanilla essence
1 teaspoon baking powder
Butter-cream frosting as required
Coffee concoction for drizzling

Method

Preheat oven to 180° C.
Cream together butter and castor sugar till light.
Add cocoa powder and fold. Add eggs, chocolate chips, coffee powder, vanilla essence, baking powder and flour and beat till well combined.
Line a baking tray with individual silicon cupcake moulds and divide the mixture equally in them, filling 3/4th.
Put the tray in the preheated oven and bake for 10-15 minutes. Remove from oven, cool and demould.
Halve the cupcakes horizontally and place the base halves onto individual serving plates. Top with a scoop of butter-cream frosting and cover with remaining halves.
Drizzle coffee concoction and serve.
