Daal Pakwan
Recipe in English:

Ingredients:
-Maida (All-purpose flour) sifted 2 Cups
-Namak (Salt) 1 tsp
-Ajwain (Carom seeds) tsp
-Zeera (Cumin seeds) 1 tsp
-Ghee 2 tbs
-Pani (Water) 3/4 Cup or as required
-Cooking oil for frying
-Cooking oil 1 tsp
-Adrak (Ginger) chopped 1 tsp
-Lehsan paste (Garlic paste) 1 tsp
-Chana daal (Split bengal gram) 1 Cup (soaked for 1 hour)
-Lal mirch powder (Red chilli powder) tbs or to taste
-Haldee powder (Turmeric powder) 1 tsp
-Dhania powder (Coriander powder) tsp
-Garam masala powder tsp
-Namak (Salt) tsp or to taste
-Pani (Water) 1 & Cups or as required
-Pani (Water) Cup or as required
-Hara dhania (Fresh coriander) chopped 1-2 tbs
Tadka:
-Cooking oil 2-3 tbs
-Hing (Asafoetida) powder tsp
-Zeera (Cumin seeds) tsp
-Dried red chilies 2-3
Assembling:
-Imli pulp (Tamarind pulp) 2-3 tbs
-Chaat masala
-Pyaz (Onion) chopped
-Hara dhania (Fresh coriander) chopped

Directions:
-In bowl add all-purpose flour, salt, carom seeds, cumin seeds, ghee and mix well.
-Gradually add water and knead until hard dough is formed. Cover and let it rest for 15-20 minutes.
-Grease hands with oil and knead dough again until smooth.
-Take a small dough (70 g), sprinkle dry flour and roll out with the help of rolling pin. Prick with fork (makes 5-6).
-In wok heat cooking oil and fry on medium low flame until golden brown.
-In saucepan add cooking oil, ginger and saute.
-Add garlic paste and saute well.
-Add split Bengal gram and mix well.
-Add red chilli powder, turmeric powder, coriander powder, garam masala powder & salt. Mix well and cook for 1-2 minutes.
-Add water mix well and bring it to boil. Cover and cook on medium flame for 30-35 minutes or until tender then mash slightly.
-Add water mix well and cook on low flame for 2-3 minutes.
-Add fresh coriander, mix well & set aside.
Prepare Tadka:
-In small frying pan add cooking oil, asafoetida powder, cumin seeds, dried red chillies, mix well and cook for 30 seconds.
Assembling:
-Take out cooked daal in a serving dish. Add tamarind pulp & sprinkle chaat masala. Pour tadka. Add onion,fresh coriander & serve!

Directions:
-Bowl mein maida, namak, ajwain, zeera aur ghee daal ker ache tarha mix ker lein.
-Thora thora ker k pani shamil karein aur goond ker hard dough tayyar ker lein. Dhak ker 15-20 minutes k liye rakh dein.
-Saucepan mein cooking oil aur adrak daal ker mix karein.
-Lehsan paste daal ker ache tarha mix ker lein.
-Chana daal dal ker ache tarha mix karein.
-Lal mirch powder, haldee powder, dhania powder, garam masala powder aur namak daal ker ache tarha mix karein. 1-2 minutes tak pakayen.
-Pani daal ker ache tarha mix karein aur ubal anay k baad dhak dein aur darmiyani ancch per 30-35 minutes ya gal janay tak paka lein phir halka sa mash ker lein.
-Pani daal ker ache tarha mix karein aur halki ancch per 2-3 minutes tak pakayen.
-Hara dhania daal ker mix keren & side per rakh dein.
Prepare Tadka:
-Chotay frying pan mein cooking oil, hing powder, zeera aur dried red chilies daal ker ache tarha mix karein aur 30 seconds k liy paka lein.
-Serving dish may daal ko nikal lein. Imli ka gooda, chaat masala aur tadka daal dein. Pyaz aur hara dhania charak ker serve karein!
