Dates Cake- No Sugar No Maida and No Egg | Gayathiri's Cookbook

This Dates Cake is simple and delicious.Dates are an excellent source of fiber, natural sugars, low in cholesterol and fat. Have this healthy cake for breakfast or as a snack with your coffee or tea. This cake is naturally sweetened with dates and walnuts. Can be enjoyed guilt-free by kids and adults alike.

I wanted to do a healthy version, so I avoided sugar, regular milk, and all purpose flour. You can add 1/2 to 3/4 cup sugar for extra sweetness and can substitute soymilk with regular milk and wheat flour with all purpose flour for regular version.

Note: If you use all purpose flour, you will get exact cake like consistency whereas if you use wheat flour, you will get a cake consistency but with a Halwa-type taste.

My family likes the "Halwa Dates cake".

Ingredients:
Dates- 20
Soymilk- 3/4 cup
Oil- 1/4 cup
Applesauce- 1/4 cup
Vanilla essence- 1 Teaspoon
Wheat flour- 1 cup
Baking soda- 1 teaspoon
Chopped walnuts- 1/4 cup
Sliced almonds- 1/4 cup


Directions:

Preheat the oven to 350 degrees.
1. Soak dates in warm milk for at least 5 hours.Grind this into a smooth paste.
2. Take this dates paste in a bowl. Sift and add the flour and baking soda to the dates paste.
3. Stir in the flour mixture.Add 1/4 cup oil, 1/4 cup applesauce, 1 tsp vanilla essence and 1/4 cup walnuts to it and mix well.
4. Pour the batter into the prepped pan.Top it with sliced almonds.
5. Bake at 350 degrees for about 35-40 minutes or until the toothpick inserted at the center comes out clean.
6. Let it cool completely for at least 30 minutes before you slice the cake.
