This Dates Cake is simple and delicious.Dates are an excellent source of fiber, natural sugars, low in cholesterol and fat. Have this healthy cake for breakfast or as a snack with your coffee or tea. This cake is naturally sweetened with dates and walnuts. Can be enjoyed guilt-free by kids and adults alike. I wanted to do a healthy version, so I avoided sugar, regular milk, and all purpose flour. You can add 1/2 to 3/4 cup sugar for extra sweetness and can substitute soymilk with regular milk and wheat flour with all purpose flour for regular version. Note: If you use all purpose flour, you will get exact cake like consistency whereas if you use wheat flour, you will get a cake consistency but with a Halwa-type taste. My family likes the "Halwa Dates cake". Pick the taste your family loves!!!Ingredients:Dates- 20Soymilk- 3/4 cupOil- 1/4 cupApplesauce- 1/4 cupVanilla essence- 1 TeaspoonWheat flour- 1 cupBaking soda- 1 teaspoonChopped walnuts- 1/4 cupSliced almonds- 1/4 cupDirections:Preheat the oven to 350 degrees.1. Soak dates in warm milk for at least 5 hours.Grind this into a smooth paste.2. Take this dates paste in a bowl. Sift and add the flour and baking soda to the dates paste.3. Stir in the flour mixture.Add 1/4 cup oil, 1/4 cup applesauce, 1 tsp vanilla essence and 1/4 cup walnuts to it and mix well.4. Pour the batter into the prepped pan.Top it with sliced almonds.5. Bake at 350 degrees for about 35-40 minutes or until the toothpick inserted at the center comes out clean.6.
