Degi Masala Biryani
Serves 4-5
Recipe in English:

Ingredients:
-Saunf (Fennel seeds) tbs
-Hari elaichi (Green Cardamom) 16-17
-Zeera (Cumin seeds) 1 tbs
-Jaifil (Nutmeg) piece
-Javatri (Mace) piece
-Shahi zeera (Caraway seeds) tbs
-Laung (Cloves) tsp
-Dahi (Yogurt) Cup
-Kewra water 1 tbs
-Zarda ka rang (Yellow food color) tsp
-Water 1 Cup
-Chicken mix boti 750g
-Adrak (Ginger) julienne 2 inch piece
-Lehsan paste (Garlic paste) 2 tbs
-Namak (Salt) tbs or to taste
-Hari elaichi (Green cardamom) 4-5
-Sabut kali mirch (Black peppercorns) tsp
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Dahi (Yogurt) Cup
-Hari mirch (Green chilli) paste 2 tbs
-Tez paat (Bay leaves) 2-3
-Lemon juice 3 tbs
-Cooking oil 3 tbs
-Chicken powder 1 sachet (18g)
-Haldee powder (Turmeric powder) tsp
-Lal mirch powder (Red chilli powder) 1 tbs or to taste
-Hara dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
-Hari mirch (Green chilies) 4-5
-Pyaz (Onion) fried Cup
-Chawal (Rice) 750g (soaked & boiled with salt until th done)
-Cooking oil 4 tbs

Directions:
-In a spice mixer,add fennel seeds,green cardamom,cumin seeds,nutmeg,mace,caraway seeds,cloves, blend well & set aside.
-In a bowl,add yogurt,kewra water,yellow food color,whisk well & set aside.
-In a pot,add water,chicken,ginger,garlic paste,salt,green cardamom,black peppercorns,cumin seeds, yogurt,green chili paste,bay leaves,lemon juice,prepared spice mix (reserve 1 tbs for later use),cooking oil,chicken powder,mix well and bring it to boil,cover & cook on medium flame for 6-8 minutes then cook uncovered on high flame until water is reduced.
-Add turmeric powder,red chilli powder,fresh coriander,mint leaves,green chilies,mix well and cook for 2-3 minutes.
-Add fried onion,prepared yogurt,half quantity of boiled rice,reserved prepared spice mix,remaining boiled rice,cooking oil,cover & steam cook on low flame for 18-20 minutes & serve!

-Spice mixer mein saunf,hari elaichi,zeera,jaifl,javatri,shahi zeera aur laung dal ker ache tarhan blend ker lein & side per rakh dein.
-Bowl mein dahi,kewra water aur zarda ka rang dal ker ache tarhan whisk ker lein & side per rakh dein.
-Pot mein pani,chicken,adrak,lehsan paste,namak,hari elaichi,sabut kali mirch,zeera,dahi,hari mirch paste,tez paat,lemon juice,tayyar spice mix (reserve 1 tbs for later use),cooking oil aur chicken powder dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiyani ancch per 6-8 minutes kliya paka lein phir tez ancch per pani kum ho janay tak paka lein.
-Haldee powder,lal mirch powder,hara dhania,podina aur hari mirch dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Fried pyaz,tayyar dahi,boiled chawal ki half quantity,reserved tayyar spice mix,baqi bachay hoye chawa aur cooking oil dal ker dhak dein aur halki ancch per 18-20 minutes kliya steam cook ker lein & serve karein!
