Arrowroot cup rice vinegar3 cloves garlic, minced1 lbs. Chicken breast, boneless, skinless, cut into 1 inch chunks1 Tbsp. avocado oil1 tsp. Garlic powderSalt1 cup purple cabbage, thinly sliced1 cup snow peas1 red bell pepper, organic, sliced yellow onion, super fine dice2 carrots, gratedGarnish:Toasted sesame seadsDirections:Start by making the sauce. In a bowl add the sauce ingredients: first add the coconut aminos, and then whisk in the arrowroot until dissolved.Then add the rice vinegar, honey, and the garlic. Whisk and set aside.Preheat a large cast iron pan or wok over medium high to high heat. Add the avocado oil and when that gets hot, add the chicken and stir fry for about 5 to 6 minutes or until the chicken is cooked through. Season with salt and garlic powder as it cooks.Once the chicken is down, place it into a dish and keep warm. Add another teaspoon of oil to the pan and add the onion, bell pepper, and snow peas and saute for about 4 minutes, stirring frequently. Then add the carrots and cabbage and season with just a touch of salt. Cook this an additional 3 minutes.Add the chicken back to the pan to reheat and stir everything to combine. Whisk the sauce again to make sure it's well mixed and then add it to the pan. Bring it to a simmer and let it thicken slightly as you mix all the ingredients together.Serve this over white rice, cauliflower rice or even zoodles for a low carb option.
