DILLI ALOO KACHALU CHAAT

Ingredients

2 medium potatoes (aloo), peeled, cut into 1 inch pieces and soaked
1 large sweet potatoes, peeled, cut into 1 inch pieces and soaked
1 inch ginger, cut into thin strips
2 teaspoons lemon juice
Salt to taste
Oil for shallow-frying
1 tablespoon sweet date-tamarind chutney
1 teaspoon chaat masala
½ teaspoon red chilli powder
2 teaspoons roasted cumin powder
1-2 green chillies, finely chopped
2 tablespoons chopped fresh coriander leaves

Method

1. Drain the potato pieces and sweet potato pieces and pat-dry using a muslin cloth.
2. Take ginger strips in a bowl. Add 1 teaspoon lemon juice and a pinch salt and mix well. Refrigerate it.
3. Heat some oil in a non-stick pan. Shallow-fry potato pieces and sweet potato pieces individually till golden brown and crisp. Drain on absorbent paper.
4. Mix together fried potatoes, fried sweet potatoes, sweet date-tamarind chutney, chaat masala, coriander leaves, chilli powder, cumin powder, green chillies and remaining lemon juice in a bowl.
5. Serve garnished with ginger strips.
