Yakader's signature is their Dum Briyani that comes with a choice of toppings - chicken, mutton and fish. The basmati rice is cooked in layers with spices and curry. Chicken and mutton are cooked separately, and then embedded in the rice to give it additional flavours. The result is the rich spice-flavoured, meat-infused, orangey-yellow rice that is packed with aromatic fragrance. The spices uses include garlic paste, ginger paste, cinnamon, star anise, and powders like tumeric, cumin, coriander, etc. A generous heap of rice is laid on banana leaf, with a big chunk of meat, a hard boiled egg and some pickled vegetables. Give the rice a little splash of curry to add moist and flavour. Otherwise the rice tastes just as good on its own. Watch the video for a glimpse into the cooking of Dum Briyani.
