This recipe will make 4 cups of sauce:
1 pound of gluten free or brown rice pasta
5 oz sweet potato
5 oz carrot
5 oz onion
1/4 cup cashews

1. Put up a pot of water to boil for the pasta.
2. Chop the veggies, add to another pot and cover with water. Put on high heat.
3. In a few minutes, when the veggies are soft, they are done.
4. In a blender, add the 1/4 cup of cashews and 1/2 cup of the boiling water from the veggies. Blend.
5. Add in the veggies and 1 cup of water from the veggie pot. Blend.
6. Drain the pasta when it's ready. Add the sauce and serve!
