Once it shimmers, add the onion and saut for 3 to 5 minutes. Once the onion are starting to brown up and caramelize, add the sweet potato. Stir to coat the potatoes.Cover the pan and cook for 7 to 10 minutes or until the potatoes are soft when a fork is inserted into it. Stir the potatoes every 3 minutes or so.Season the potatoes with salt, pepper, nutmeg and cinnamon and any other spices you like. Stir again to combine.Leaving the lid off, continue to cook an additional 2 to 3 minutes and serve with eggs, ham or bacon for breakfast.This recipe also makes a great side dish for lunch and dinner and it freezes well.
