Using cast iron allows you to easily char your onions and bell peppers for the best fajitas ever. It also keeps everything warm because the pan retains heat. Portobello Fajitas RecipeIngredients:2 portobello mushrooms, wiped clean, sliced thin1 large yellow onion1 poblano pepper, deseeded and slice into 1 inch pieces1 red bell pepper, cut into slicesFeta cheese crumblesAvocado cut into cubesLime, to squeeze over avocado Cilantro, chopped for garnish cup olive oil2 Tbsp. balsamic vinegar tsp. Garlic powderSalt and pepper to tasteSour cream, optionalCorn, flour or butter lettuce leaves Directions:Please use a cast iron pan if you have one. The results are superior.In a bowl combine the olive oil, balsamic vinegar, and salt. Add the slice mushrooms and toss to combine. Set aside to marinate.Preheat the cast iron pan over medium high heat. Add 1 Tbsp. olive oil and add the onion, bell peppers, poblano pepper and season with salt, pepper, and garlic powder. Cook, tossing frequently for about 5 to 7 minutes or until the vegetables char and soften. Once the onions are done, place them into a dish and keep warm. Add 1 tsp. of olive oil to the pan and add the mushrooms without adding too much of the balsamic marinade.As the mushrooms are cooking, which should take about 4 to 5 minutes, heat up some tortillas, if using, on a dry pan. Place them in one of those handy dandy tortilla warmers as in the video. They are wonderful!Once the mushrooms are done, place them in the pan with the onions and peppers. Now you are ready to serve these up.Slice the avocado into cubes and squeeze lime juice over all to keep the avocado from turning brown.To serve these up, take a warm tortilla or a butter lettuce leaf and layer on some mushrooms, onions, peppers, avocado, cilantro, crumbled feta, and sour cream.
