In this episode of Eatbook VS, we decided to challenge Qing to go up against none other than local brand, Nasty Cookie! Will she be able to make a delicious monster cookie, or will it just be nasty?

Full Recipe:

Ingredients needed:

275g all purpose flour
230g cake flour
280g unsalted butter
285g light brown sugar
115g white sugar
8g corn starch
8g salt
6g baking powder
300g dark chocolate
50g Lotus biscuit
4 egg yolks
2 egg whites

To make cookie dough:
1. Chop the chocolate bar into smaller pieces
2. Using a tablespoon, scoop out 12 separate dollops of Speculoos spread (about 10g each) onto a baking paper and let them harden in the freezer.
2. Melt the butter in the microwave.
3. Using a hand whisk, mix the brown sugar, white sugar and melted butter till well combined.
4. Add in 2 eggs, one at a time, followed by 2 egg yolks, mixing well with a hand whisk after each addition.
5. Combine all the dry ingredients in another bowl
6. Add the dry mix into the wet mix batch by batch.
7. Add in the chopped dark chocolate.
8. Split the dough into 2 portions.
9. For one portion (chocolate chip), roll the dough into balls of about 110g.
10. For the second portion (Speculoos), roll the dough into balls of 110g. Using your thumb, create a dent in the centre and place the frozen Speculoos spread inside. Close the dough over the Speculoos filling, ensuring it's fully wrapped.
11. Chill the dough in the fridge for at least 45 min. If you have time, leave it overnight so that the flavours can develop.
12. Bake at 190 degrees Celcius for 15 mins.
