How to make Egg Dum Biryani | Hyderabadi Egg Dum Biryani
Wash and soak rice. Take a pan with thick base. Heat the pan and add 2 tablespoons oil. Fry diced onions in oil till they become dark brown. Onions could be deep fried or shallow fried. In the remaining oil, make cuts in the eggs as shown and fry them. Add 1/2 teaspoon chilli powder, 1/2 teaspoon salt, 1/2 teaspoon coriander powder and mix carefully for 2 minutes. In a different pan heat 7-8 cups of water for 3 cups rice and Add 3 bay leaves, 6 cloves, 4 cinnamon stick pieces, 3 cardomom, 1/2 teaspoon shahjeera. Add 1 teaspoon salt, 1 teaspoon clarified butter. Let the water boil. In the boiling water add soaked rice. Boil till the rice is about 80 percent cooked. Drain the water and let the rice sit for 5 minutes. Heat a pan and add 2 tablespoons oil, 2 tablespoon clarified butter.Add 1/2 teaspoon shahjeera, 1/2 cup mint leaves and fry. Add green chilli pieces, 1 teaspoon ginger garlic paste and cook for a minute. Add 1 teaspoon chilli powder, 1 teaspoon salt, 1 teaspoon coriander powder, 1/2 teaspoon cumin seed powder and mix. Add half of fried onions and half cup curd. Cook on low flame for 2 minutes. Add 1/2 cup coriander leaves and mix. Add fried eggs. Add boiled rice like a layer. Sprinkle coriander leaves and mint leaves equally. Add remaining fried onions, 2-3 tablespoons clarifed butter. Sprinkle water if necessary. Put a heavy lid and cook for 5 minutes on high flame and 10 minutes on low flame and cut off the flame. Let it sit for 10 minutes and open the lid. Carefully mix from bottom.
