5 tablespoons (71 g) unsalted butter, almost melted, but with a few soft but solid pieces remaining
¾ cup packed (150 g) light brown sugar
1 teaspoon vanilla extract
1 large egg, cold
½ teaspoon baking soda
½ teaspoon kosher salt
¼ teaspoon ground cinnamon
1 teaspoon cream of tartar
1 ½ cups (195 g) all-​purpose flour

For the Cinnamon-​Sugar
3 tablespoons granulated sugar
1 ½ teaspoons ground cinnamon
