South Indian filter coffee/ madras coffee/ filter coffee

This is a traditional way of making South Indian coffee. You will need a coffee filter/bullet to make this special coffee.
They are easily available in all Indian stores.

Coffee powder plays an important role in making a good coffee. Mix equal quantities of freshly roasted, ground Peaberry and Plantation A coffee beans for tasty coffee.

Chicory can be added to make a stronger coffee. Usually 50 grams of chicory is added to 1 kg of ground coffee powder. I always get chicory powder separately (10 grams packet) from India.

I keep coffee powder and chicory powder in the freezer until I use it. Whenever I am done with the existing coffee powder, I take a fresh packet out, mix chicory and then make coffee with it.

Ingredients:

Coffee powder- 7 teaspoons
Water- 1 cup
Sugar- 3/4 tsp
Boiled milk- 3/4 cup

Ingredients:
1. South Indian coffee filter has 3 parts. Top container with holes, bottom container to collect the decoction and a pressing disc. Put 7 teaspoons of freshly ground coffee powder in the top container.Pack it tight with the disc provided or with the back of the spoon.
2. Pour 1 cup of boiled water and close the lid immediately.Wait for 10-15 minutes.
3. Thick decoction should percolate to the lower container.
4. Put required sugar in the tumbler.
5. Pour less than 1/4 cup decoction .If you want it strong, add more decoction, if you prefer mild coffee, add less decoction.
6. Add 1/2 cup boiled milk.Mix it back and forth to gain froth.

Filter coffee is ready!! Serve hot!!
