Fish'n'Rsti (Fish Filet in Crispy Potato Crust)

Difficulty: Easy
Time: 20 min
Number of servings: 2-3

Ingredients:
300g (10.5oz.) white fish
200g (7oz.) potatoes
Kayanoya Vegetable Dashi Stock Powder or Salt & Pepper
1 tbsp. olive oil
watercress or any greens
lemon wedges

Directions:
1. Cut potato into thin strips or use a grater. Do not rinse the potatoes, you want the starch to hold together. You do want to squeeze the potatoes to remove excess moisture.
2. Cut white fish in half or three equal parts, then season with 1 package of Kayanoya Vegetable Dashi Stock Powder or simply Salt & Pepper is ok.
3. Coat the fish with potato strips.
4. Heat olive oil in a frying pan on medium, place the Fish'n'Rsti, cover, cook for 5 minutes until the underside is crisp golden brown.
5. Flip them over, and cook for another 5 minutes, or more on both sides if necessary. When both sides are golden and crispy, it's done.
6. Serve on a plate, garnish with greens and lemon wedges to finish.
