A healthy and yummy breakfast option prepared with the goodness of eggs and fish to kick-start your day.FISH OMELETTEIngredients2-3 king fish (surmai) darnesSalt to taste1 tbsp lemon juice½ tsp turmeric powder¾ tsp red chill powder½ tbsp ginger-garlic paste2 tbsps oilOmelette8 eggs1 medium onion, finely chopped1 medium tomato, finely chopped4-5 green chillies, finely chopped2 tbsps chopped fresh coriander leavesA pinch of red chilli powderA large pinch of turmeric powderSalt to taste4 tbsps oilToasted bread to serveTomato ketchup to serveMethod1. Marinate fish darnes with salt, lemon juice, turmeric powder, red chilli powder and ginger-garlic paste for 10 minutes. 2. Heat oil in a non-stick shallow pan. Place the marinated darnes and cook on high heat for 2-3 minutes. Gently flip and cook the other side for 2-3 minutes as well.3. Take the fish darnes on a plate and debone them. Lightly mash the fish.4. Break in the eggs in a large bowl, add the the fish, onion, tomato, green chillies, red cilli powder, turmeric powder and salt and whisk with a fork. 5. To make one omelette, heat 1 tbsp oil in a non-stick shallow pan. Add a portion of the egg mixture and lightly spread. Cook for 2-3 minutes, fold in half and serve hot with toasted bread.
