A healthy and yummy breakfast option prepared with the goodness of eggs and fish to kick-start your day.

FISH OMELETTE

Ingredients

2-3 king fish (surmai) darnes
Salt to taste
1 tbsp lemon juice
½ tsp turmeric powder
¾ tsp red chill powder
½ tbsp ginger-garlic paste
2 tbsps oil
Omelette
8 eggs
1 medium onion, finely chopped
1 medium tomato, finely chopped
4-5 green chillies, finely chopped
2 tbsps chopped fresh coriander leaves
A pinch of red chilli powder
A large pinch of turmeric powder
Salt to taste
4 tbsps oil
Toasted bread to serve
Tomato ketchup to serve

Method

1. Marinate fish darnes with salt, lemon juice, turmeric powder, red chilli powder and ginger-garlic paste for 10 minutes.
2. Heat oil in a non-stick shallow pan. Place the marinated darnes and cook on high heat for 2-3 minutes. Gently flip and cook the other side for 2-3 minutes as well.
3. Take the fish darnes on a plate and debone them. Lightly mash the fish.
4. Break in the eggs in a large bowl, add the the fish, onion, tomato, green chillies, red cilli powder, turmeric powder and salt and whisk with a fork.
5. To make one omelette, heat 1 tbsp oil in a non-stick shallow pan. Add a portion of the egg mixture and lightly spread. Cook for 2-3 minutes, fold in half and serve hot with toasted bread.
