Zucchini is rich in several minerals and vitamins, and they are versatile, so by substituting flour pasta with zucchini, you can enjoy your meal guilt free. Ingredients:(1 serving)Zucchini-1 (Medium size)Choice of protein- Soy or Pea protein or Seitan stripsCherry tomatoes-4Oil- 2-4 tspGarlic cloves-2Tomato sauce/Puree -1/2 cup Cheese (any kind)- 1/4 cupHeavy cream or Half and half or Milk- 1/4 cupRed chilli flakes- 1/2 tspOregano-1/2 tspSalt- 3/4 tspParsley- for garnishingDirections:1..Saut cherry tomatoes in little oil and set aside.2.Saut choice of protein in little oil and set aside.3.Slice zucchini into thin strips and saute with little salt till tender.
