SYRIAN REFUGEE VILLAGE IN LEBANON

BREAD: Roll the dough into balls. Flatten and place in the tandoor oven to bake.

MANCHI MALFOUF (Stuffed Cabbage): Boil the cabbage head, peel the leaves, and mix parsley, mint, and grated tomatoes in a pan. Soak the rice and add it to the mixture after mashing the garlic. Lightly fry the meat and add it to the mixture. Incorporate tomato paste, a mixture of 7 spices, and salt. Mix everything. Cut the cabbage into smaller pieces and stuff them with the mixture. Place the rolled cabbage in a pot, then add pepper, mashed garlic, salt, dried mint, olive oil, and tomato paste mixed with water. Cook on the fire.

BEMYE (OKRA): Cut off the head of the okra, dice and grate the tomatoes. In a pot, add ghee and vermicelli noodles, then add rice, tomato mash, water, and salt.

MANSAF: In a large pan, add half rice and half bulgur. Place the lamb meat around with the head in the middle.
