FRESH CHENNA AND VEGETABLE BHURJI
A great source of protein and fibres that are necessary for growing kids.

Ingredients

500 ml cow’s milk
2 tsps lemon juice
2 tsps oil
½ tsp cumin seeds
2 tbsps boiled and crushed green peas
2 tbsps boiled and crushed sweet corn kernels
Salt to taste
1 tbsp chopped fresh coriander leaves
Toasted bread to serve

Method

1. To make the chenna, heat the milk in a deep non-stick pan till it begins to boil. Add the lemon juice and stir continuously till the milk curdles. Strain the chenna through a muslin cloth and dip in chilled water immediately.
2. Heat oil in a non-stick pan and add cumin seeds and let them change colour. Add green peas and sweet corn and sauté for 1 minute.
3. Add chenna and salt and mix. Cook for 1 minute. Add coriander leaves and mix, take the pan off the heat.
4. Transfer into a bowl and serve with toasted bread.
