Freshly made tacos stuffed with lots of vegetables and chicken in spicy sauce.FRESH TACOS Ingredients1 cup maize flour⅔ cup refined flour + dustingSalt to tasteA pinch turmeric powder1½ tablespoons oil4 tablespoons refried beans1 large red bell pepper, cut into juliennes1 large green capsicum, cut into juliennes½ cup shredded purple cabbage¾ cup grilled chicken strips½ cup shredded Iceberg lettuceSour cream for drizzling Method1. Take maize flour in a bowl. Add refined flour, salt and turmeric powder and mix.2. Add sufficient warm water, mix and knead into a semi-soft dough. Add oil, knead again and set aside for 10-15 minutes.3. Divide the dough into equal portions and roll out into medium size chapattis dusting with refined flour. These are tacos. 4. Heat a non-stick pan. Place the tacos on it and roast till golden from both sides. 5. Place the roasted tacos on a serving platter. Place 1 tablespoon refried beans on one side. Top with red pepper, capsicum, cabbage, chicken strips and lettuce, bring the other half over and shape into a crescent.6. Drizzle some sour cream on top and serve immediately.
