Fresh Tacos | Sanjeev Kapoor Khazana

Freshly made tacos stuffed with lots of vegetables and chicken in spicy sauce.

FRESH TACOS

Ingredients

1 cup maize flour
⅔ cup refined flour + dusting
Salt to taste
A pinch turmeric powder
1½ tablespoons oil
4 tablespoons refried beans
1 large red bell pepper, cut into juliennes
1 large green capsicum, cut into juliennes
½ cup shredded purple cabbage
¾ cup grilled chicken strips
½ cup shredded Iceberg lettuce
Sour cream for drizzling

Method

1. Take maize flour in a bowl. Add refined flour, salt and turmeric powder and mix.
2. Add sufficient warm water, mix and knead into a semi-soft dough. Add oil, knead again and set aside for 10-15 minutes.
3. Divide the dough into equal portions and roll out into medium size chapattis dusting with refined flour. These are tacos.
4. Heat a non-stick pan. Place the tacos on it and roast till golden from both sides.
5. Place the roasted tacos on a serving platter. Place 1 tablespoon refried beans on one side. Top with red pepper, capsicum, cabbage, chicken strips and lettuce, bring the other half over and shape into a crescent.
6. Drizzle some sour cream on top and serve immediately.
