An all-time classic dish, fried chicken is raw but heavenly, and a simple, but delectable dish to make!FRIED CHICKENIngredients8 chicken drumsticks2 cups buttermilk1-2 green chillies, finely chopped ½ inch ginger, grated Salt to taste¾ cup refined flour (maida)3-4 tablespoons rice flour 2 tablespoons polenta ½ teaspoon smoked paprika ½ teaspoon garlic powder½ teaspoon onion powderCrushed black peppercorns to taste 2 eggsOil for shallow-frying Spice mix 1 teaspoon smoked paprika 1 teaspoon garlic powder1 teaspoon onion powder Salt to taste 1-2 fresh thyme sprigs 2 teaspoons olive oil Method1. Make incisions on chicken drumsticks and transfer in a bowl. Add buttermilk, green chillies, ginger and salt and mix well. Refrigerate to marinate for 12 hours.2. To prepare spice mix, mix together paprika, garlic powder, onion powder, salt and thyme leaves in a bowl. Add olive oil and mix well. 3. Put the marinated chicken drumsticks into the spice mix and mix well. Set aside for 10-15 minutes.4. Mix together refined flour, rice flour, polenta, paprika, garlic powder, onion powder, crushed peppercorns and salt in a bowl.5. Beat eggs in a bowl. Add 1-2 tablespoons water and mix. Add salt and crushed peppercorns and mix well. 6. Heat some oil in a non-stick pan. 7. Coat each marinated chicken drumstick with flour mixture, dip in beaten egg and again coat with the flour mixture. 8. Put the prepared chicken drumsticks in hot oil and shallow-fry on low heat from all sides till golden brown and crisp. Drain on absorbent paper. 9. Serve hot.
