Gluten Free Banana Bread Recipe

Ingredients:
2 cups Bobs Red Mill Gluten Free 1 to 1 Baking flour
3 large bananas, very ripe with brown spots
1 stick butter from pasture raised cows
2 eggs, from pasture raised chickens
1 tsp. Vanilla extract
cup sugar
cup raw honey
1 tsp. Baking soda
tsp. Salt
tsp. Cinnamon
cup walnuts, chopped

Directions:
Preheat oven to 350 degrees F.

Take some butter about 1 tsp or 2 and grease the inside of a 9 inch by 5 loaf pan.

In a medium size bowl add the flour, sugar, baking soda, salt and cinnamon. Whisk until completely combined.

In a large mixing bowl, add the bananas and mash with a potato masher until almost liquidy. Melt the butter on the stove in a saucepan or in the microwave. If you use the microwave place the butter in a microwave safe bowl for 45 seconds on power 3. Stir. Go longer if needed until the butter is melted.

Add melted butter to the bananas and mix to combine. Then add the vanilla extract and stir again.

In a separate small bowl, add the eggs and whisk with a fork until blended and add this to the banana mixture and stir until well combined. Now add the honey and mix well.

Pour the dry ingredients into the wet ingredients and fold in. Dont overmix here, just fold until all the dry ingredients are wet. Add the walnuts and fold those in. I usually add these just before the flour is completely mixed in so I dont overmix.

Pour batter into prepared loaf pan and spread it into the corners of the pan with a spatula.

Bake in the center of the oven at 350* F. for 45 minutes. Bread is done when a toothpick, inserted into the center of loaf comes out clean. If its not done in 45 minutes, continue to cook for 5 minute intervals until the toothpick comes out clean.
Let the banana bread cool for 10 to 15 minutes before cutting if, like me, you enjoy it warm out of the oven. I love mine topped with a bit of butter.
