Gluten Free Beef Taquitos Recipe
Ingredients:
1 lb. grass fed hamburger
2 Tbsp. Rockin Robins Homemade Taco Seasoning (no fillers)
Avocado oil
of a large yellow onion, finely diced
to cup of Siete Brand Red Enchilada Sauce (clean ingredients)
Siete Brand Almond Flour Tortillas
Sour cream
lb of cheddar and monterey jack cheese, grated

Avocado Cream Sauce
2 large ripe avocados
1 cup plain full fat yogurt
1 good handful of fresh cilantro
- 1 tsp. Salt
Zest and juice of 2 organic limes
tsp. Garlic powder
tsp. Ground coriander

Directions:
In a large frying pan add the hamburger, taco seasoning and the onion. Cook over medium heat while breaking up the hamburger into small pieces. Once it looks done (no pink) add the enchilada sauce and stir until everything is hot. Set aside and keep warm.

Now lets make that avocado cream sauce. Place the avocado, yogurt, cilantro, salt, zest and juice of the limes, garlic powder and coriander in a food processor and mix until smooth. Take a taste test and adjust the ingredients as needed. Pour into a bowl, squeeze bottle or zip loc bag for serving. Keep chilled until ready to serve.

Back to the taquitos. Place a frying pan over medium heat and pour about inch of avocado oil in the pan.

Heat up 1 almond flour tortilla at a time in a dry frying pan. Toss the tortilla a couple of times until it is warm and pliable and place it on a tray or plate to assemble. Place a spoonful of beef down the center of the tortilla and sprinkle a bit of cheese on top. Roll the taquito tightly keeping the seam side down. Make 3 or 4 taquitos and then place them into the hot oil. It should sizzle when they enter the pan.

Let the taquito cook for a minute or 2 or until they are a golden brown. Turn them over to cook on the second side using tongs. Once both sides are a crispy golden brown, move them to drain on a paper towel covered plate.

Once ready to serve, drizzle the avocado cream sauce over the taquitos. Then drizzle some sour cream and garnish with more chopped cilantro. Enjoy these rolled tacos!
