Sweet Potato pancakes recipe

Ingredients:
cup sweet potato, cooked
cup oat flour
1 cup Bobs Red Mill Gluten free Pancake Mix
tsp. Salt
1 cup milk, any type, or more
1 heaping tsp. Ground cinnamon
1 egg
2 Tbsp. butter
1 cup pecan pieces

Directions:
If you are using fresh sweet potato, rinse them first and then poke several holes in them with a fork.

Place the potatoes in the microwave and cook them on high for 3 minutes and check for doneness. Continue to cook them in 2 minute increments until they are fork tender. Let them cool until you can handle them. Scoop out the sweet potato with a spoon.

Place all the ingredients in a blender starting with the milk and egg. This will help keep the batter from clumping on the bottom of the blender.

Blend on low speed and scrape down the sides of the blender. Add more milk/alternative to get the consistency you want. I like mine on the thinner side.

Place a griddle pan over medium heat and add some butter to the pan and spread it all around. Once the butter is bubbling, pour the batter onto the pan in the desired size.

Cook for about 4 to 5 minutes. Check for doneness by looking for the bubbles on top of the pancakes to pop and look less wet and lifting the pancake with a spatula and taking a peek underneath.

If the pancake is a nice golden brown, turn them over. When you are ready to serve them, place a handful of pecans on top along with a drizzle of maple syrup. Enjoy these scrumptious homemade pancakes for your next breakfast. You wont even notice that they are gluten free!
