Thank you very much for your support! ~ Rockin RobinGluten Free Teriyaki MeatballsIngredients:Sauce cup white wine, cabernet sauvignon works fine1 cups chicken broth6 Tbsp. tamari sauce5 Tbsp. Brown sugar, packed2 - 2 Tbsp. arrowroot1 tsp. Fresh lemon juice Meatball filling:Ingredients:2 lbs. Ground beef, grass fed1 egg cup ketchup1 tsp. Garlic powder tsp. Onion powder1 tsp. SaltPepper to taste tsp. Dried basilGarnish:Toasted sesame seedsChivesCauliflower rice onion, diced1 Tbsp. Olive oilDirections:Preheat oven to 350 degrees F.In a large bowl, combine the hamburger, egg, ketchup, garlic powder, onion powder, salt, pepper, and dried basil. With clean hands mix until everything is incorporated but dont overmix.Line a baking sheet with parchment paper or even better if you have a ovenproof rack that will support the meatballs, use that. The advantage to using the rack is that it will allow the grease to fall into the bottom of the pan. Form 1 to 1 inch balls with your hands and place them on the baking sheet. Leave space between the meatballs so they are not touching each other.Bake in a 350 degree F. oven for 28 to 30 minutes. You can test them with an instant read thermometer. You are looking for 165 degrees F. and they will be done.Now for the sauce. Place the wine, chicken broth, Tamari sauce, brown sugar, and the lemon juice in a bowl and mix with a whisk.Place the sauce in a large frying pan over medium high heat. Once it comes to a boil, simmer for 10 minutes.At the same time you are making the sauce, place a frying pan over medium heat. Add 1 Tbsp. of olive oil to the pan and add the diced onion. Saute this for 3 to 4 minutes. Once softened add the cauliflower rice and add some salt. Stir to combine.Once the cauliflower is coated with the olive oil, cover the pan and turn the medium low. Cook for about 5 minutes or until soft. Stir the cauliflower a few times while cooking. Set aside and keep warm.Back to the sauce. After the sauce has simmered for 10 minutes. Mix the arrowroot with just enough water or chicken broth to dissolve it. Turn the sauce back up to medium heat and add the arrowroot slowly to the pan while constantly stirring. Once the arrowroot is completely incorporated and the sauce thickens, add the meatballs back to the pan to get hot.Serve these Teriyaki meatballs over cauliflower rice, white rice, or even mashed potatoes.
