GOAN FISH CURRYIngredients2 medium pomfrets, cut into darnes1 tablespoon oil 2 green chillies, slit1 large onion, finely choppedSalt to taste1 lemon size tamarind ball, soaked and pulp removed2 teaspoons malt vinegarSteamed Basmati rice for servingFresh coriander leaf for garnishingPaste6 dried red chillies2 teaspoons cumin seeds15 garlic cloves2 inch ginger, roughly chopped2 tablespoons coriander seeds½ cup scraped fresh coconutMethod1. To prepare paste, coarsely grind together dried red chillies, cumin seeds, garlic cloves, ginger, coriander seeds and coconut alongwith ¼ cup water.2. Heat oil in a deep non-stick pan. Add green chillies and sauté for 10 seconds. Add onion and sauté till translucent. 3. Add ground paste, sauté for 1 minute, cover and cook for 1-2 minutes. Add 1½ cups water, mix, cover and cook for 5 minutes. 4. Add fish darnes and salt, lightly mix, cover and cook for 3-4 minutes. Add tamarind pulp and malt vinegar, mix, cover and cook for 1 minute.5.
