I love to serve this bread right out of the oven after it's cooled just a bit and then place a pat of real creamy butter and then enjoy!

It makes a great dessert, breakfast, or snack.

Ingredients:
1 cup sugar
1/2 cup shortening
1 tsp. baking soda
pinch of salt ( about 1/4 tsp.)
1 egg, beaten
1/2 cup milk
2 cups of flour
2 to 3 bananas, mashed

Directions:
Preheat oven to 325 degrees F. Grease a 9 x 5 inch loaf pan with shortening.

Cream the sugar and shortening in a bowl with electric mixer. Add the egg and stir. Then mix briefly with electric mixer.

Add the milk and stir by hand and then with the mixer until incorporated.

Mash the banana in a separate bowl until pureed. Then addd the banana puree into the egg mixture and stir in until incorporated.

In a separate bowl, combine the flour, baking soda, and salt.

Then add 1/3 of the flour mixture to the egg mixture stirring until just incorporated. Do not over mix.

Then add the second 1/3 of the flour mixture and stir again. Then add the last 1/3 of the flour and stir until just mixed in.

Pour batter into loaf pan and bake between 55 and 65 minutes or until golden brown and a tooth pick inserted in the middle of cake comes out clean.

Let the bread cool for 10 minutes and then turn out onto a wire rack.

Serve warm with butter! Yum!
