Greek Vegan CHRISTMAS! Christ bread

This is a bread made with sourdough. It can also be made with yeast, but I chose to do it with sourdough

For the sourdough you'll need:
Loads of patience (it takes 3-4 days)
1st and 2nd day: 3 tbsp flour and 3 tbsp warm water (not hot)
Mix those together and then keep them at a warm place for 24h
3rd day: just 3 tbsp flour, cover and keep at a warm place for another 24h
For the bread:
1kg (2 lbs) flour, which you'll mix with the sourdough, 1tsp of salt, 1 tbsp of sugar and 1/2 tsp of anise seeds. Add as much warm (not hot) water as needed to make a non sticky dough
Knead for a while and then cover and keep at a warm place for 2 hours.
Take the dough off your bowl using some oil on your hands. cut of a piece of dough the size of an orange (you can use that as a sourdough for your next bread).
Cut off one third of the rest of the dough for the decorations. Knead and make a bread of a round shape. Leave it aside to rest. Meanwhile make two long strips of dough to make the cross.
Put the strips of the dough on top of the bread, to form a cross. Use some water with sugar to coat the bread. Add sesame seeds. Put a whole walnut in the middle.
Bake at 200 C (390 F) for 30-45 minutes
