Greek Vegan CHRISTMAS! Melomakarona

FOR THE MELOMAKARONA (COOKIES)
1 cup olive oil
1/4 cup beer
1/4 cup sugar
1/4 cup orange juice
2 tbsp cognac or other sweet liquor (optional)
1/2 tsp cinnamon
1/4 tsp carnation powder
500 gr (1 lb) flour
1 tsp baking powder
1 tsp baking soda

FOR THE SYRUP
1 cup "honey"
1 cup sugar
1 cup water
2 tbsp lemon juice

FOR THE TOPPING
1 cup ground walnuts
1/2 tsp cinnamon
1/4 tsp carnation powder

First make the bee free honey and let it cool
Then, make the dough for the cookies:
In one bowl, mix the orange juice, beer, oil and cinnamon-carnation mix. Add the sugar and stir with a spoon.
In another bowl mix the flour with the baking soda and baking powder.
Add the dry ingredients to the liquid ones, little by little, stir with the spoon only. If you need to put your hands in the end, do so, but don't knead a lot.
Place small cookies on the oven tray (with a parchment paper), keeping a good distance between each other. Make holes with a fork. Put in a preheated oven at 180 C (350 F) and bake for 20-25 minutes.
Meanwhile, make the syrup: In a sauce pan, put the water, "honey" and sugar, add the lemon juice and stir only at the beginning. After it boils, lower the heat and let it simmer for 10 minutes.
As the cookies are out of the oven, dip them in the syrup and let them absorb it from each side (about 30 seconds per side), before putting them on a plate.
Mix the walnuts with the cinnamon+carnation and top the cookies with it generously.
