GREEN BEANS AND POTATOES IN WHITE SAUCE RECIPE I Light And Nutritious

In this episode, Id like to share with you an easy white sauce recipe. And it tastes very light. You can use this sauce instead of cream or bechamel sauce, when baking. You can also use any desired veggies for this recipe, just making sure to adjust the cooking time until tender, but not mushy.

INGREDIENTS
500 gr. (1.1 pounds) green beans
500 gr. potatoes
50 gr. butter (3.5 tbsp)
2.5 cups milk (500 ml.)
1 large egg
1 cup grated cheese (50 gr.) plus more to taste
A tiny pinch of nutmeg
1/2 tsp mustard
Salt & pepper
Olive oil

DIRECTIONS
Rinse and drain the beans.
Remove the ends and strings.
Cut into similar-size cubes.
Peel and rinse the potatoes.
Cut into cubes, about the size of the green beans.
Melt the butter in a big pan, over medium heat.
Add 2.5 cups milk on top.
Sprinkle 1 leveled tsp or to taste salt, and a pinch of black pepper, mix.
Add the beans and potatoes, mix.
Bring to a boil.
Then reduce heat to medium low and cook for 10 minutes, stirring occasionally.
Meanwhile, preheat oven to 200C. (392 F)
Grease the bottom and sides of a baking dish generously with olive oil.
I use a 30x18 cm (12x7 inches) deep dish.
When the time is up, turn off the heat.
Using a slotted spoon, drain the veggies, then transfer to the baking dish.
Reserving 1/2 of the grated cheese for the top, add remaining cheese into the pan, combine with milk and mix until melted.
Grate a tiny pinch of nutmeg.
Add 1/2 tsp mustard, mix well.
At this point, season the veggies and the sauce to taste.
Finally, beat the egg then combine with the sauce, beat again.
Pour the white sauce over the veggies, mix gently and smooth the top.
Evenly sprinkle the reserved cheese on top.
Feel free to sprinkle some more grated cheese, if desired :)
Bake for about 25-30 minutes, or until desired doneness.
Let cool for 20 minutes over a wire rack or racks of your gas stove.
Garnish with chopped greens, I usually use some chives.
Loosen the edges.
Then slice gently with a serrated knife.
Using a spatula, transfer to a serving plate and enjoy.
It tastes so light and yummy, it is also nutritious.
