These grilled bell peppers are wonderful filled with goat cheese, fresh parsley, basil and drizzled with fresh lemon juice. Easy and healthy!

Grilled Bell Peppers Recipe

Ingredients:
bell peppers, any color
coconut oil
goat cheese, cut into thin slices
fresh parsley, chopped
fresh basil, leaves stacked and rolled, then chopped
fresh lemon juice
salt
garlic powder

Directions:
Preheat bbq to medium high heat.

Cut the bell peppers in half and remove the stem, seeds and membrane.

Coat the peppers with coconut oil inside and out. Sprinkle with salt and garlic powder on the inside of the pepper.

Place the peppers on the bbq, cut side down and grill for 4 or 5 minutes or until you have grill marks and the pepper is softened slightly.

Turn the peppers over and add the cheese, parsley, and basil. Grill an additional 4 or 5 minutes or until the bottom of the pepper is charred a bit.

Remove bell peppers to a platter and drizzle with fresh lemon juice.

Serve as an appetizer or side dish. You and your guests will love them!
