Grilled Pineapple Parfait Perfect for 4th Of July by Rockin Robin

Grilled pineapple parfait is the perfect dessert for this 4th of July with it's red, white, and blue fruit. It's easy to make and delicious.

Grilled Pineapple Parfait
1 fresh pineapple, cored, peeled and cut into spears
1 container blueberries
1 container strawberries, organic
1 banana, peeled, cut length wise and then cut in half
1/2 lemon
1 container raspberries, rinsed
1 cup chopped walnuts, toasted
2 cups vanilla yogurt

Directions:
Grill the pineapple spears and banana slices over medium high heat. Be sure and brush a light coating of olive oil before placing on grill pan.

Grill only until grill marks appear, about 2 minutes. Turn fruit over and grill second side.

You may want to use a pancake turner to flip over the banana as it tends to get very soft and break apart.

Once done, place the fruit on a plate to cool slightly.

Toast the walnuts by placing them in a dry pan over medium low heat. Turn them frequently to make sure they don't burn. This should only take 5 to 10 minutes to brown. Set aside to cool.

To assemble the parfaits.

Place a few blueberries in the bottom of your glass and just layer the fruit and yogurt as you go.

I did blueberries, raspberries, strawberries, yogurt, walnuts, banana, raspberries, strawberries, yogurt, pineapple, walnuts, strawberries, and blueberries in that order.

Any order with the ingredients is fine. Do what sounds good to you.
