Halloween Stuffed Kabocha - Cooking Japanese Recipe

Kabocha is a Japanese squash or pumpkin. So what better way to celebrate Halloween then with a stuffed kabocha jack-o-lantern! This recipe is sure to please the whole family. It is ooey gooey delicious. The kabocha creates a wonderful shell for the wonderful bacon gravy and cheese mixture. And the kabocha is more than just the shell. It is part of the meal as it is basically the crust of the pie.

But this Japanese recipe doesn't need to be a Halloween only recipe. It can be enjoyed anytime of the year that you might want a hearty meal.

Ingredients:

1 kabocha
1/2 onion
4 bacon slices
1 tbsp butter
2 tbsp flour
2/3 cup milk
1 cup baby spinach
Pinch of salt and pepper
1/2 cup shredded mozzarella cheese
