HAMSI BURGER RECIPE - Fresh Anchovy Burgers

INGREDIENTS (9-10 burgers)
1.5 kg. (3 pounds) fresh anchovies
2-3 eggs
Corn flour (yellow)
1 cup finely chopped green onions
1/2 cup finely chopped fresh parsley
1/4 cup finely chopped fresh mint
1/2 lemon
Sweet paprika
Salt&pepper
Sunflower oil for frying

DIRECTIONS
Before cleaning anchovies, rub your hands with some lemon juice or work with gloves, to eliminate smelly hands.
Take an anchovy and hold, belly facing up, then pull the head off downwards at a diagonal angle.
With your thumb, gently open the two sides of the fish up.
Gently pull the bone and the tail out in one long piece, starting at the middle.
Remove the innards and discard.
Transfer cleaned anchovies into a large bowl, fill the bowl with water, mix then drain.
Repeat this process for at least 5-6 times, or until the water is clear.
Crack eggs into a bowl, sprinkle a pinch of salt and pepper, beat.
For the filling: Combine chopped greens in a bowl.
Add 2-3 tbsp beaten egg on top.
Sprinkle 1/2 tsp salt, a pinch of black pepper and sweet paprika.
Squeeze 1 tbsp fresh lemon juice, mix and set aside.
Squeeze 1/2 lemon juice on top of anchovies.
Sprinkle a good pinch of black pepper and salt, toss gently.
Put some corn flour into a plate, sprinkle a pinch of salt, mix.
Dip anchovies into corn flour then arrange them skin-side down and slightly overlapping, over a very small-round shape plate, like a Turkish tea plate.
Add 1 heaping teaspoon filling into the center.
Dip a few more anchovies into corn flour and place on top of filling to cover, skin-side up.
Then fold the sides over the filling one by one, and press to seal gently.
Sprinkle some corn flour all over the burger, press gently and transfer into a plate.
Repeat the same until all is done.
Use more corn flour, as needed.
Cover the plate and refrigerate for at least 1 hour.
To cook burgers, heat 1 1/2 cups oil, in a large pan, over medium to medium high heat.
Dip burgers gently in beaten egg, remove excess egg and carefully place into pan.
Cook for about 4-5 minutes or until golden brown.
Then flip them over very carefully with a spatula, and cook the other side for another 4-5 minutes.
Place on paper towels to drain excess oil.
Repeat with the remaining burgers.
You may serve Hamsi Burger with some greens and lemon wedges.
Or assemble in a bun with some mayonnaise, greens, onion ring, sliced tomato, Hamsi burger then the bun top.
