Hara lehsan ka Paratha
Recipe in English:

Ingredients:
-Atta (Wheat flour) sifted 2 Cups
-Namak (Salt) ¼ tsp
-Ghee 2 tbs
-Neem garam pani (Lukewarm water) ½ Cup or as required
-Hara lehsan (Green garlic) ½ Cup
-Hari mirch (Green chilies) 2-3
-Namak (Salt) 1 pinch
-Cooking oil 1 tsp
-Cooking oil for frying
Hara Lehsan Chutney:
-Hara lehsan (Green garlic) chopped ½ Cup
-Hari mirch (Green chilies) 2-3
-Hara dhania (Fresh coriander) ½ Cup
-Adrak (Ginger) 1 inch piece
-Lemon juice 2-3 tbs
-Pani (Water) 2-3 tbs or as required
-Namak (Salt) ¼ tsp or to taste

Directions:
-In bowl,add wheat flour,salt,ghee and mix well.
-Gradually add lukewarm water and knead until dough is formed,cover and let it rest for 15 minutes.
-Chop green garlic and green chilies & add it in bowl.
-Add salt and mix well,cover & set aside.
-Knead dough again with wet hands.
-Take a small dough and make a ball,sprinkle dry flour and roll out with the help of rolling pin.
-Add cooking oil and spread it.
-Sprinkle dry flour and add prepared green garlic filling.
-Fold half dough and cut slightly with the help of the cutter then unfold the dough and roll it from top to bottom,twist and make a round dough again (makes 5-6).
-Cover and let it rest for 4-5 minutes.
-Sprinkle dry flour and roll out with the help of rolling pin.
-On griddle,add cooking oil and fry paratha from both sides until done.
For Hara Lehsan Chutney:
-In chopper,add green garlic,green chilies,fresh coriander,ginger,lemon juice,water,salt and chop well.
-Serve chutney with paratha.

Ajza:
-Atta (Wheat flour) sifted 2 Cups
-Namak (Salt) ¼ tsp
-Ghee 2 tbs
-Neem garam pani (Lukewarm water) ½ Cup or as required

-Hari mirch (Green chilies) 2-3
-Namak (Salt) 1 pinch
-Cooking oil 1 tsp
-Cooking oil for frying
Hara Lehsan Chutney:
-Hara lehsan (Green garlic) chopped ½ Cup
-Hari mirch (Green chilies) 2-3
-Hara dhania (Fresh coriander) ½ Cup
-Adrak (Ginger) 1 inch piece
-Lemon juice 2-3 tbs
-Pani (Water) 2-3 tbs or as required
-Namak (Salt) ¼ tsp or to taste

Directions:
-Bowl mein atta,namak aur ghee dal ker ache tarhan mix karein.
-Thora thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein,dhak ker 15 minutes kliya rakh dein.
-Hara lehsan aur hari mirch ko chop ker lein aur bowl mein dal dein.
-Namak dal ker ache tarhan mix karein aur dhak ker side per rakh dein.
-Geelay haathon sa dough ko dubara ghond lein.
-Chota dough lein aur ball bana lein,atta chirak dein aur rolling pin ki madad sa bail lein.
-Cooking oil dal ker pheela lein.
-Atta chirak dein aur tayyar hara lehsan ki filling dal dein.
-Dough ko half fold ker lein aur cutter ki madad sa slightly cuts laga lein phir dough ko dubara unfold ker lein aur top sa bottom ki taraf fold ker lein aur twist ker ka dubara round dough bana lein (makes 5-6).
-Dhak ker 4-5 minutes kliya rakh dein.
-Atta chirak dein aur rolling pin ki madad sa bail lein.
-Tawa per cooking oil dal dein aur parathay ko dono sides sa fry ker lein.
For Hara Lehsan Chutney:
-Chopper mein hara lehsan,hari mirch,hara dhania,adrak,lemon juice,pani aur namak dal ker ache tarhan chop ker lein.
-Chutney ko parathay ka saath serve karein.
