Hare Chane Ke Paranthe | Sanjeev Kapoor Khazana

Delicious paranthas stuffed with green chickpeas.

HARA CHANE KE PARANTHE

Ingredients

¾ cup green chickpeas (hara chana), boiled
1 cup whole wheat flour
½ tsp caraway seeds
Salt to taste
1 tbsp ghee + applying
1 small onion, chopped
1-2 green chillies, chopped
½ inch ginger, grated
1 tsp roasted cumin powder
½ tsp chaat masala powder
1 tsp dried mango powder (amchur)
½ tsp turmeric powder
1 tbsp freshly chopped coriander leaves
Pickle to serve

Method

1. In a bowl, add whole wheat flour, caraway seeds, salt, ghee, and sufficient water, and knead to semi-soft dough.
2. In a blender jar, add green chickpeas and blend to coarse paste. Transfer to a bowl.
3. Add onion, green chillies, ginger, cumin powder, chaat masala , amchur powder, turmeric powder, salt, chopped coriander and mix well. Set aside.
4. Divide the dough into equal portions, and shape them into balls. Take a portion of the dough ball, make a cavity in the middle and stuff it with a portion of the prepared stuffing.
5. Seal the edges, and slight flatten them. Apply a little ghee on top and roll into a parantha of 10 centimetre diameter.
6. Heat a non-stick tawa, place the prepared parantha on it and cook for 2-3 minutes. Flip and apply ghee on both sides. Cook for 1 minute and take it off the pan.
7. Serve hot with pickle.
