Add about 2 Tbsp of olive oil to the pan and the onion and mushrooms. Saute for 30 minutes. You will turn the heat to low after things get cooking and you can hear the onions sizzling.While the onions are cooking, place the cauliflower florets into a double boiler and steam for 5 to 7 minutes or until they are soft but not mushy.Once the cauliflower is done, pull it off the heat and place a stock pot of water over high heat on the stove to cook the noodles in. Drizzle some olive oil over the shrimp and use your fingers to coat them. Then season with a little salt and plenty of garlic powder. Flip the shrimp over and put more garlic powder on the second side.Once the onion and mushrooms have cooked for 30 minutes, add the minced garlic and cook, stirring pretty constantly for 1 to 2 minutes more.Place the onion mixture, the cauliflower, and about a cup of the chicken broth to a blender. Blend until completely smooth and add just enough broth to get it to blend. Back to the frying pan - place the butter over low heat into the pan to melt. Once it melts, add the onion/mushroom mixture to the pan and stir. Add the parmesan cheese and stir until it melts in. Then add the half & half and pepper and stir until it is fully incorporated.Preheat a grill pan to cook the shrimp in over medium high heat.Cook the pasta according to package instructions. While the pasta is cooking, place the shrimp on the grill and cook for about 2 minutes per side. Do not overcook. Set shrimp aside when done.Drain the pasta, and add it to the sauce and toss to coat the noodles.
