Sesame oil1 heaping Tbsp. salt1 tsp. Red chile flakesDirections:Place your sliced cucumbers and onion in a colander. Sprinkle the salt over all and work the salt in a bit with your fingers. Place the colander in the sink or in a bowl for 20 minutes so that the water can drain out.Lets make the dressing.Place the vinegar, sesame oil, sugar and the chile flakes in a separate bowl and whisk until the sugar has completely dissolved.Let this dressing sit so the flavors can develop while the cucumbers are draining. After 20 minutes, rinse the cucumbers with cold water to remove any excess water by gently pressing the water out.Place the cucumbers and onions in a large bowl and add the dressing. Toss in the carrots and the peanuts and toss.Lastly sprinkle the goat cheese on top. Refrigerate to chill and serve. Thanks for watching and sharing!Rockin RobinP.S.
