Salt1 cup sharp cheddar, shredded1 cup gruyere, shredded1 tsp. Olive oil1 Tbsp. butter tsp. Freshly grated nutmeg8 - 10 oz. pastaDirections:Place a tsp. of olive oil and the butter into a large frying pan over medium high heat and add the sliced onion. Stir and cook for 20 minutes. At 18 minutes into cooking the onion, add the garlic and cook 2 more minutes.In a stock pot add the milk, chicken broth, and butternut squash over medium high heat. Add the salt and grate in the nutmeg, stir and then cover when it comes to a simmer. Cook for about 20 minutes or until the squash is fork tender.Once the squash is done, turn off the heat and let this cool 5 to 10 minutes.Heat a pot of water on the stove to cook the pasta. Pasta takes about 11 minutes to cook so time it so that everything is done at the same time.Then place the squash mixture along with the onion in a blender. Blend until smooth and add more chicken broth if you need it to blend.Place this mixture back into the frying pan and heat over medium low. Add both the cheddar and gruyere cheese and stir until it melts in. Drain the pasta and add it to the cheese mixture. Stir to coat the noodles.
