Mint Chip Ice Cream Recipe
Ingredients:
1 ripe banana, mashed
cup fresh mint leaves
cup fresh spinach
cup sugar
heaping cup of chocolate chips, chopped fine
tsp. Mint extract or more to your liking
2 cup organic heavy whipping cream
Pinch of salt

Directions:
In a medium pot of boiling water, add the mint and spinach leaves in a metal strainer. Cook the leaves for 30 seconds. Immediately plunge the leaves in a bowl of ice water to stop the cooking process.

This will preserve the bright green color. Pour the leaves into a blender and add about cup of water. Blend until the mint and spinach are pureed.

Pour the mixture through a cheese cloth over a bowl and squeeze to get all the juice to pass through to the bowl. Refrigerate for a few minutes.

In a large mixing bowl, combine the heavy whipping cream, sugar, well mashed banana, mint extract and a pinch of salt. Using a whisk, blend the mixture until you can feel that the sugar has dissolved completely.

Add about 8 Tbsp. of the mint/spinach mixture to the bowl and whisk again until everything is incorporated.

Pour this mixture into a pre-frozen ice cream maker insert and churn for 16 or 17 minutes. Then add the chocolate chips/shavings to the ice cream and churn for a total of about 20 minutes or according to your machine's directions. 20 minutes was perfect for me.
