Mint extract or more to your liking2 cup organic heavy whipping creamPinch of saltDirections:In a medium pot of boiling water, add the mint and spinach leaves in a metal strainer. Cook the leaves for 30 seconds. Immediately plunge the leaves in a bowl of ice water to stop the cooking process.This will preserve the bright green color. Pour the leaves into a blender and add about cup of water. Blend until the mint and spinach are pureed.Pour the mixture through a cheese cloth over a bowl and squeeze to get all the juice to pass through to the bowl. Refrigerate for a few minutes.In a large mixing bowl, combine the heavy whipping cream, sugar, well mashed banana, mint extract and a pinch of salt. Using a whisk, blend the mixture until you can feel that the sugar has dissolved completely. Add about 8 Tbsp. of the mint/spinach mixture to the bowl and whisk again until everything is incorporated.Pour this mixture into a pre-frozen ice cream maker insert and churn for 16 or 17 minutes.
