Annie's Organic Honey Mustard2 carrot, organic, peeled and cut into small coins5 stalks of asparagus, cut into bite size pieces stalk celery, organic2 slices of cheese, I used cheddar but use your favoriteArugula, organicOlive oilFresh lemon juiceDirections:Place the carrots and asparagus in a double boiler to steam about 3 to 4 minutes until just fork tender. Pour the cooked veggies into a bowl to cool some.Place the salmon, celery, onion, mayo, mustard in a bowl and stir to combine. Place half of the salmon mixture onto one almond flour tortilla and spread the mixture out evenly about inch from the edge of the tortilla.Add the veggies, as much as you want, and then top with cheese. This can be grated or sliced. Put another tortilla on top and place into a preheated (medium heat) frying pan with a little olive oil. Put a lid on top to help heat up all the ingredients and melt the cheese.When the bottom is a golden brown (maybe 5 to 8 min.) flip the quesadilla over, cover again and cook until everything is heated through and the bottom is golden crunchy brown.
